Tofu, Rice & Veggies (One Pot Dish in 1 Hour for 30 People)

This is the fastest and most well-balanced vegetarian dish in the west. I've made it many times when I have little time and want to eat or feed others healthfully.

 

Serves 30

 

(4) 12 ounce packages OR (3) 16 ounce packages of organic firm/medium or soft tofu, cubed

12 cups of veggies of your choice, just not beets or turnups because they take forever to cook
4 cups Basmati Rice or Quinoa
10 cups water or vegetable broth
1 TBSP of salt (no salt added if vegetable broth has salt in it)

 

Directions

 

Remove your tofu out of the package and cut it up into cubes.  Place tofu between layers of several clean towels with a heavy object on top to help squeeze out some of the water.  Put 10 cups of water or vegetable broth in a large boil pot on a medium flame and bring to a boil.  While the water is heating, clean and cut up your vegetable.  Then rinse your rice or quinoa thoroughly.  When the water comes to a boil, add all the ingredients including the tofu.  Bring back to a boil, cover tightly and turn down to low for 20 minutes.  

 

Enjoy with plain yogurt, Braggs, and/or tahini sauce drizzled over.
