This is the fastest and most well-balanced vegetarian dish in the west. I've made it many times when I have little time and want to eat or feed others healthfully.
Serves 4-5
Ingredients
1 12oz package of organic firm/medium or soft tofu, cubed
3 cups of veggies of your choice, just not beets or turnups because they take forever to cook
1 cup Basmati Rice or Quinoa
2 1/2 cups water or vegetable broth
1 tsp of salt (no salt added if vegetable broth has salt in it)
Directions
Remove your tofu out of the package and cut it up into cubes. Place tofu between two clean towels with a heavy object on top to help squeeze out some of the water. Put 2 1/2 cups of water or vegetable broth in a 2 quart boil pan on a medium flame and bring to a boil. While the water is heating, clean and cut up your vegetable. Then rinse your rice or quinoa thoroughly. When the water comes to a boil, add all the ingredients including the tofu. Bring back to a boil, cover tightly and turn down to low for 20 minutes.
Enjoy with plain yogurt, Braggs, and/or tahini sauce drizzled over.
