Garlic Parsley Dandelion Greens
4 tbsps. Olive Oil
4 tbsps. fresh parsley, finely chopped
2 garlic cloves, minced
salt and pepper to taste
1 bunuch dandelion greens, washed & shredded
1 tbsp. pimientos, chopped, for color
Warm olive oil in pan. Add parsley, garlic, salt and
pepper. Fry gently until garlic softens. Add optional
pimientos and cook another few minutes. Add shredded
dandelion greens and simmer gently for 5 minutes or
until tender. Serve hot. Serves 4.
