Yukon Gold & Sweet Potato Breakfast Fries
4 oz. Yukon Gold potatoes, sliced 1/4 inch thick
4 oz. sweet potatoes, sliced 1/4 inch thick
3 oz. onions, julienned
1 oz. olive oil
Salt and pepper to taste
1 Tbsp fresh chives, finely chopped

Preheat oven to 425 degrees F
1. In a large bowl combine all ingredients, except chives, and toss well to evenly coat the potatoes
2. Spread the potatoes on a large baking sheet so they rest in one layer
3. Bake the potatoes for 30 minutes
4. Remove the pan from the oven and turn the potatoes over
5. Continue cooking for an additional 30 minutes or until tender and brown
6. Toss with fresh chives and serve
